24/12/06 - Oaty Cherry Biscuits
Finally managed to make something yummy for us - and wheat and dairy free!
Christmas is one time of year I *really* relax on the food front, so long as it won't make them ill - these fellows were wheat adn dairy free so on our 'yes' list for when the others were having cheesecake, et al....
Sure you can have the recipe - CHERRY OAT COOKIES
1 cup rolled oats 1 cup wholemeal flour 1 cup sugar ½ cup coconut ½ cup chopped dates ½ cup currants ½ cup glace cherries 125gms butter 1 T golden syrup 1 tsp bicarbonate soda 1 T boiling water
Mix dry ingredients. Warm butter with syrup until melted. Combine soda and water, add to butter mix and stir well. Stir into dry mix while still warm. Roll into balls (about 1T each) and cook on lightly greased oven trays in slow oven (150C) for about 20mins or until browned. Allow to cool 5mins before transferring to wire rack. Makes about 30 cookies. Keeps well or freeze.
Works with spelt flour and dairyfree margarine; can leave out glace cherries or substitute other dried fruit. Nice half-dipped in chocolate.

Oh my goodness! Did you have as hard a time as I had this year? With all the goodies around, I had to keep telling my kids no.
I'd love the recipe to this. It looks yummy!
